Swati's Grilled Bombay Sandwich : Recipe

Here comes another quick recipe for those hunger pangs! Bombay sandwich/toast. Now I have not been to Mumbai yet, but I have seen that it usually has the sandwich a spicy tempered potato filling.

But I tweaked the traditional recipe to suit me.  Here's Bombay Sandwich my way!

It is nothing fancy and can be made with simple everyday ingredients in 10 minutes. I made them for dinner yesterday for the family & everyone loved it.

Here is your ingredient list:

Bombay Sandwich Ingredients


For the Corainder Chutney-

  • Corainder leaves (once cup tightly packed)
  • Chopped Tomato (one medium sized)
  • Garlic Cloves (3-4 large)
  • Green Chilli (according to your liking)
  • Salt 
  • A bit of Water (only if needed)
  • Few drops of Mustard Oil

For the Filling-

  • Cucumber
  • Onion
  • Capsicum 
  • Boiled Poatato
  • Tomato
  • Butter
  • Bread slices- 3 per sandwich (white/whole wheat whichever)
  • Salt (to taste - I tend to skip it). 
  • Ground black pepper 
  • Chaat masala 
Mix all the ingredients listed for the chutney above in a mixer grinder until it forms a smooth paste. Do not make it runny and thin. Adjust the salt to suit your taste if needed. Thats the chutney done!
You can make the chutney ahead in time and keep it in the fridge. I always make a big batch and store it. That way you can make this sandwich in 5 mins. 

Now for assembling the sandwich: 
Slice all the veggies and the bolied potato first and keep them aside.
Butter the bread slices and apply chutney to only 2 of them. (You could trim the sides if you like it that way, I chose to keep them).

Layer your vegetables on these slices now. Sprinkle salt, pepper and chaat masala on each layer you do. The chutney spread slices make the top and the bottom of the sandwich and the plain buttered one is for the additional layer. 
Put it in your grill/sandwich maker until it becomes crispy golden brown. Cut into half and enjoy (which some ketchup) !!

These are made without cheese, but if you are a huge cheese fan (go ahead and put some. You could also make this with two bread slices. I just find that using 3 gives me more space to put in loads of veggies.

You can have them plain without grilling, especially if the bread is fresh and soft.
